Healthy Lemon (Cauli) Rice

Healthy Lemon Cauli-Rice

A healthy low carb (no rice) option full of flavor to the traditional south India lemon rice recipe.

 

Ingredients

  1. Riced Cauliflower (fresh or frozen) 3 cups
  2. Curry leaves – 7-8 leaves
  3. Mustard seeds black 1/2 tsp.
  4. Salt to taste
  5. Red Chilli Powder to taste
  6. Turmeric powder 1/4 tsp.
  7. Olive oil (any other oil / ghee of your choice) – 1 tbsp.
  8. Lemon Juice 1/8 cup

Step 1: In a pan heat the oil and add mustard seeds, add the curry leaves once the seeds pop.

Step 2: The curry leaves will crisp within seconds, add riced cauliflower quickly.

Step 3: Add salt, turmeric powder, red chili powder and mix.

Step 4: Sprinkle little water, cover the pan and cook for 5-7 minutes. Make sure to not over cook riced Cauliflower as that can get soggy and ruin the texture. If you use frozen caulirice, reduce the minutes to cook as it gets cooked partially while defrosting.

Step 5: Remove from flame, add lemon juice and mix. Serve hot.

  2. 🙂 yes, peanuts are popular in lemon rice, I personally don’t like peanuts so didn’t add in this version but I am sure many folks would love the bite peanuts bring to the dish. Thanks for sharing!
